  • Vinification: The grapes are harvested before full ripeness. No maceration of the pomace is performed; the must is obtained exclusively through free-run juice, resulting from the natural gravitational draining of the crushed grapes, without any mechanical pressing. After a brief cold-settling process, the clarified juice is racked and fermented in stainless steel tanks at controlled temperatures, with the addition of selected yeasts.
